If I were to say (for example) ‘difficult to be sarcastic’ would it be
    皮肉にくい
    or
    皮肉しにくい?
So, in general, when using やすい and にくい with する, would you use the stem of する (し) or would you just connect the noun/na-adjective to them? Thanks.

The correct way is with the し. The にくい and やすい parts need to connect to a verb, so する(→し) is needed.

I don’t think that 皮肉 is used with する though.
