    I am having a pain with this word. The way it is written and the way it is pronounced isn’t the same and I simply can’t get the sounds right.

    When I listen to it, it kinda sounds like shtori or stori and sometimes the “I” sounds super fast.
    What is the correct sound?

    The “sh” sound in the recording is a microphone artefact. That said い sounds can often get compressed (especially as the English-speaker’s gut feeling is to put the emphasis on the first syllable, but there’s no such emphasis in Japanese).

    i’ve heard native speakers pronounce it as shitori instead of hitori and also shitotsu (ーつ) instead of hitotsu. it’s simply an easier way for them to pronounce these words. you can pronounce them either way and native speakers will understand you.
